MIRACORE™- Achieving deliciousness and satisfaction through plant-based ingredients

MIRACORE™ is a technology brand launched in 2021 to deliver the satisfaction of animal-based foods through plant-based ingredients. We have developed plant-based dashi (broth), as well as products such as ramen and curry that utilize dashi.
It started with our R&D Division for Future Creation, which has been advancing research on deliciousness. In addition to conventional research on physical properties and physiological functions, when the Division began research specifically on flavor, it turned its attention to the issue of plant-based ingredients tasting “good but not quite satisfying.” The challenge of recreating the rich flavor of animal-based ingredients with plant-based ones was the starting point of MIRACORE™.

The philosophy behind MIRACORE™ flavor creation
MIRACORE™ is a technical platform for delivering the flavor of animal-based foods through plant-based ingredients. The key is using plant-based ingredients to replicate the states of lipids and proteins common to animal-based foods. Furthermore, it is about expressing the essence of a particular food by combining plant-based ingredients. Through these approaches, we replicate diverse flavors such as chicken, beef, and seafood through plant-based ingredients.
Since the foundation of Fuji Oil, we have been accumulating research on plant-based oils and fats and plant-based protein. MIRACORE™ represents the unique technical foundation of Fuji Oil, achieved by integrating these technologies.

Food that would make anyone think “I want this again”
MIRACORE™ offers plant-based soup stock MIRA-Dashi™ and a range of other products suitable for use in a variety of Japanese, Western, and Chinese dishes. Plant-based soup stock also contributes to solving challenges surrounding food, such as export restrictions, allergies, religious dietary requirements, and labor shortages.

MIRACORE™ is technology that can unlock a behavioral shift toward plant-based diets. We believe that if plant-based foods that would make anyone think “I want this again” become widespread, we can enrich our diets through a balanced use of both animal and plant resources and achieve a sustainable food system.
