Pioneering new ingredients through basic research
In addition to soybean-related research, the Food Science Research Institute conducts research in oils and fats as well as chocolate and emulsified & fermented foods. The Institute develops commercial applications for new ingredients and expands Fuji Oil's wealth of basic technologies, while nurturing a new generation of researchers with a global perspective. Theme leaders at the Food Science Research Institute oversee all issues related to each individual theme, from the project's progress to development of commercial applications for creating new businesses. Close cooperation with the Product Development Teams in each division and the Institute of Application Technology is an essential part of the process for developing new products.
